My Weight Loss & Fitness Transformation Story

My story: My name is Mary Carmen Miranda.  I will be 31 this upcoming April and I consider myself Fit & Healthy individual.  I’m Mexican.  I have Bachelors in Biology from the University of Iowa, currently studying  my masters to become a Registered Dietitian.  I’m also a Fitness blogger, healthy recipe creator, healthy lifestyle promoter and I look to inspire people to change their lives by making healthier choices for a long-term lifestyle change.

I started my Weight Loss & Fitness journey 2.5 years ago due to a relationship breakup and that led me to find my passion in life, Fitness.  At the beginning of my journey, April 2012 I weighted 145 lbs and I honestly let myself go in my relationship.  I did the entire P90X program and on December 2012, I hired my 1st fitness inspiration, IFBB PRO Nicole Moneer to be my trainer and show me proper form.  I was prepping for a show for May 2013 and I decided I was not happy with my body to step on stage.  I continued to train myself and be my own nutritionist.  In March 2014, I decided to hire Ingrid Romero and Joe Discudillo from Team Edge and I did my 1st NPC Bikini competition in July 5th.  I placed top 5 and I’m currently working out to build a better package to bring this year to stage.

My biggest reason why I fell in love with Fitness and Nutrition is because they helped me overcome my breakup, low self-esteem, depression, fibromyalgia, hyperthyroidism, chronic stress, and it helped me feel FIT and Healthy.  I’m glad I found this path and led me to losing weight and having the physique I always dreamed of.

Mi Historia de Transformación de Pérdida de Peso y Fitness

Mi historia: Mi nombre es Mary Carmen Miranda Enriquez. Cumpliré 31 años este Abril y me considero una chica Fit y Saludable.  Soy Mexicana.  Tengo una licenciatura en Biología y estoy estudiando para mi maestría para titularme como Registered Dietitian (Dietista Registradara).   Soy bloguera de Fitness y Nutrición, invento recetas saludables y me gusta promover un estilo de vida saludable.

Comencé mi trayecto de Perdida de Peso y Fitness hace 2.5 años por una ruptura sentimental y esto me llevo a encontrar mi pasión que es Fitness.  Al principio de Abril 2012 pesaba 145 libras.  Solía ir al gym solo a hacer cardio por horas y no perdía peso.  En verdad me deje ir en mi relación y no me sentía motivada a nada.  Sufría de depresión y de auto estima bajo.

Comencé haciendo el programa de P90X y en Diciembre 2012 contrate a mi primera inspiracion de Fitness, IFBB PRO Nicole Moneer para que fuera mi entrenadora personal.  Me estuve preparando para competir para Mayo 2013, pero decidí no hacer esperar porque no sentía que mi cuerpo estaba listo para competir.  En Marzo 2014, contrate a Ingrid Romero y Joe DiScuillo de Team Edge y logre hacer mi primera competencia en Julio 2014.  Quede top 5 y actualmente estoy preparándome para mi próxima competencia y traer un mejor físico.

La razón más grande por la cual me enamore de Fitness y Nutricion es porque me ayudo a superar mi ruptura, bajo autoestima, depresión, problemas de fibromialgia, hipertiroidismo, estrés crónico y logre tener el cuerpo que siempre soñé.

Ingredients (Ingredientes)

Makes 5-6 patties

  • 1 lb Grass Fed Ground Beef  (1 lb Carne de Res Molida)
  • 1/2 bunch Cilantro (Medio ramo de cilantro)
  • 4 Garlic Cloves (4 Dientes de Ajo)
  • 1/4 cup Yellow Onion (1/4 taza de Cebolla Amarilla)
  • Freshly Ground Black Pepper (optional)
  • Sea Salt (optional)

I didn’t put Salt or Pepper in mine to allow the garlic, onion & cilantro to provide the main flavors.

Instructions:

  • In a saucepan cook patties until desired internal temperature.  I cooked mine 3 mins per side on medium heat.

Ingredients:

Makes 4 stuffed apples

Option 1: Almonds & Walnuts Stuffing

  • 4 Granny Smith Apples
  • Cinnamon
  • Nutmet
  • Allspice
  • Apple Pie Spice
  • Packets of Truvia/Stevia
  • Almonds, chopped
  • Walnuts, chopped
  • Almond Meal for topping

Option 2: Almonds, Pecans & Raisins Stuffing

  • 4 Granny Smith Apples
  • Cinnamon
  • Nutmet
  • Allspice
  • Apple Pie Spice
  • Packets of Truvia/Stevia
  • Almonds, chopped
  • Pecans, chopped
  • Raisins

NOTE: Ingredients will depend on your liking.

Serving Size: 4

Instructions:

  • Carefully take out the core of each apple with a spoon.
  • In a bowl, mix all the ingredients with the core until well incorporated.

  • Stuff each apple with the “stuffing.”

  • Top with Almond Meal, sprinkle cinnamon and Truvia

  • Put the apple lid and bake at 450 for 12-15 minutes.

WELCOME TO THE OFFICIAL HEALTHY_MC BLOG!  Super excited to share my ideas, recipes, workouts and tips for a Healthier Lifestyle.
