GREEN TROPICAL SMOOTHIE

Have you ever tried a green smoothie with Avocados?  It seriously makes the smoothie super creamy and smooth.  This smoothie is perfect for those hot summer days to refresh yourself.  I added fruits that will help with weight loss, satiety, provide excellent health benefits for cardiovascular diseases and provided a super tropical fruity taste.

HEALTH BENEFITS

Mangoes Health Benefits:

  • Rich in Fiber.
    • Helps with Digestion due to its high fiber content and enzyme properties.
  • Excellent source of Vitamin A, B6, C and E.
  • Excellent source of Potassium.  100 g provides 156 mg of Potassium.
  • Antioxidant properties to help your body get rid of toxins
  • Lowers Cholesterol due to its high levels of fiber, pectin and vitamin C.
  • Helps with Diabetes by helping normalize insulin levels in blood due to its low glycemic index (41-60).

  • 1/2 an Avocado
  • 1/4 cup Pineapple
  • 1/4 cup Mangoes
  • 1/4 cup Peaches
  • 1/2 cup Kale
  • 1/2 cup Spinach
  • Young Coconut Water

Directions

  • Cut fruit into chunks.  
  • Place all items in a blender and blend until smooth and creamy.

SHRIMP AND MANGO TROPICAL SALAD

Is it a salad or a salsa?  Well, that depends on your mood!  I have been craving Mangoes for a while and they are in season right now.  They are fresh, sweet and have a unique flavor.  You can seriously make anything with Mangoes, salads, smoothies, fresh mango water, baby puree, sushi, anything!  It is a very versatile fruit.

Mangoes Health Benefits:

  • Rich in Fiber.

Ingredients:

Note: the ingredients will vary according to how many people will be eating it.  I used 1/2 a mango, 1/2 avocado, 4 oz of cooked shrimp and 1 cup of all mixed veggies.  You can adjust.

  • Mango
  • Cooked Shrimp
  • Avocado
  • Cilantro
  • Purple Onion
  • Yellow Onion
  • Mini Sweet Bell Peppers (tricolor)
  • Serrano Pepper
  • Lime Juice
  • Sea Salt (optional)

Directions

  • Chop all veggies finely.

  • Cut Mango and Shrimp into bite size pieces
  • Mix all ingredients in a bowl and squeeze lime juice.
  • Add sea salt (optional).
  • You can eat as a salad or with Brown Rice chips.

TUNA & BLACK BEAN SALAD (ENSALADA DE ATUN Y FRIJOLES NEGROS)

Want to eat something deliciously amazing, fresh, easy to make and with a Méxican twist?

This salad is perfect for those days you want to eat something with great Méxican flavor, but don’t want to spend much time making it.  I guarantee you will want to make this as a snack all the time.  Perfect for Spring and Summer weather days.

Ingredients:

  • 1 can Albacore Tuna in Water
  • 1/4 cup Black Beans, low sodium, drained
  • 1/2 a Jalapeño Pepper, finely chopped
  • 1/4 cup Cilantro, finely chopped
  • 1/8 cup Tomato, diced
  • 1/8 cup of Small Onion, finely chopped
  • 1 Tbsp Red Bell Pepper, finely chopped
  • Fresh Juice of 1 Lime

Directions

      • Drain tuna from can. Place in container.
      • Add all chopped vegetables and beans.
      • Squeeze juice of 1 lime over ingredients and mix well.
      • Refrigerate for 10 minutes.
      • Serve over Brown Rice chips.

TUNA & BLACK BEAN SALAD (1)

Quieres comer algo increíblemente delicioso, fresco, fácil de preparar y con un toque Méxicano?

Esta ensalada que prepare es perfecta para esos días que quieres comer algo con sazón Méxicano, pero no quieres emplear mucho tiempo preparándolo. Te garantizo que vas a querer preparar esta ensalada para un snack o colación todo el tiempo. Es perfecto para los días soleados de Primavera y Verano.

Ingredientes:

  • 1 lata de Atún Albacore en Agua
  • 1/4 taza de Frijoles Negros, bajos en sodio, escurrirlos
  • 1/2 de Chile Jalapeño Pepper, picadito finamente
  • 1/4 taza de Cilantro, picadito finamente
  • 1/8 taza de Jitomate, picadito finamente
  • 1/8 taza de Cebolla, picadito finamente
  • 1 Cucharada de Chile Dulce Morron Rojo, picadito finamente
  • Jujo de 1 Limon

Direcciones:

      • Escurrir el Atún y poner en un contenedor.
      • Agregar todos los vegetales ya picados y los frijoles negros.
      • Esprime el jugo de un limon e incorpora todos los ingredients      juntos hasta que esten bien revueltos.
      • Mete al refrigerador por 10 minutos para que este frio.
      • Servir sobre chips o duritas de Arroz Integral.

  3. Sobresitos de Endulzante Natural Stevia (Truvia)
  4. Canela en Polvo.
