HEALTHY STRAWBERRY PROTEIN MUFFINS

Ingredients:

  • ½ cup Strawberries
  • 3 Egg Whites
  • ¼ cup Gluten-Free Quick Oats
  • 1 scoop ON Vanilla Cream Protein Powder
  • 1 Packet Truvia
  • Cinnamon
  • Vanilla Extract
  • Muffin Pan
  • Cupcake Liners (optinal)

Instructions

  • Pre-heat oven 400F.
  • In a blender (I use Magic Bullet), blend all ingredients together.
  • Put cupcake liners in muffin pan.
  • It makes about 7-8 muffins.  Pour batter evenly into each cupcake liner.
  • Bake for about 10-12 mins.  Sometimes it takes a lit bit longer.  Keep an eye on them since strawberries makes them extra moist, timing idoes vary.
  • You’ll know the muffins are done when batter rises and they turn slightly gold.

MUFFINS DE PROTEICOS DE FRESA SALUDABLES

Ingredients:

  • ½ taza de Fresas
  • 3 Claras de Huevo
  • ¼ taza de Gluten-Free Quick Oats (avena)
  • 1 medida (scoop) de ON Vanilla Cream Whey  Protein Powder
  • 1 sobresito de Truvia
  • Canela molida
  • Extracto de Vainilla
  • Charola de Muffins/Cupcakes
  • Forros o papeles para cupcakes

Instructions

  • Pre-calentar horno convencional a 400F.
  • Licua todos los ingredientes juntos hasta que estén bien mezclados.
  • Pon 1/4 de taza en cada papelito para cada Muffin.
  • Hornea por 10-12 minutos.  Dado que llevan fruta fresca, quizas tomen un poco mas para estar.
  • Algo simple y rápido.  Espero los disfruten 🙂

(makes 5-6 muffins)

-1 cup Spinach

-1/2 cup Oat Flour

-2 Tbls. Almond Flour/Meal

-4 Egg Whites + 1 whole Egg

-1 tsp low sodium Baking Powder

-1 packet Truvia

-Cinnamon

-Natural Vanilla Extract

1) Blend all items together in a Blender or Magic Bullet.

2) Bake at 400degF (200degC) for 15 mins

Protein: Egg Whites ▪️Fats: Yolk & Almond Flour ▪️Complex Carbs: Oat Flour ▪️Spinach🍃 One of the most nutrient dense foods to consume. Rich in Vitamin A & K, dietary fiber which aids in diegestion, antioxidants and Iron.

Muffins Saludables de Espinacas y Proteina

Healthy Spinach Protein Muffins

(porcion 5-6 muffins)

-1 taza Spinacas

-1/2 taza Harina de Avena

-2 Cucharada Harina de Almendras

-4 Claras de Huevo + 1 Huevo Entero

-1 cucharadita de Polvo para Hornear bajo en Sodio

-1 sobre de Truvia (o Stevia)

-Canela en Polvo

-Extracto de Vainilla Natural

 

1) Licuar todos los ingredients en una licuadora o Magic Bullet.

2) Cocinar a 400 grados Fahrenheit (200 grados Celsius

La proteina viene de las claras de huevo.  Grasas saludables de la yema del huevo y harina de almendras.  Carbohidratos complejos: harina de avena.

Las espinacas son uno de los alimentos mas denso  en nutrients y bajos en calorias.  Un alimento que es considerado “nutrient denso,” significa que aportan mas nutritienes por volumen.   Por ejemplo 1 taza de espinacas aporta mas nutrients que 1 taza de lechuga iceberg.   Son abundantes en Vitamina A y K, fibra que ayuda con la digestion y tu Sistema digestive, contiene antioxidants y Hierro!

CINNAMON SWIRL MUFFIN

Ingredients:

  1. ¼ c gluten-free oats
  2. 3-4 egg whites
  3. 1 packet Stevia (Truvia)
  4. 1/8 tsp vanilla extract
  5. Cinnamon
  6. For “frosting.” ½ tsp vanilla cream whey protein powder + wáter.

Instructions:

  1. Place all ingredients in a coffee mug (make sure it is a large one since it rises up while cooking).  Mix Well.

  1. Place in microwave for about 1:30-2 mins.  Keep an eye on it! Let it rise and you’ll know is cooked.

  1. Let it sit about 1 minute until it cools down.

4.    Take out of coffee mug and place in a plate.  Drizzel the ‘frosting’ over it and sprinkle with cinnamon!
